A Standard Instrument Departure is a published profile of climb-out from an airport, which is passed to the crew by the controller, as part of the aircraft's flight  and departure clearance.

It is absolutely mandatory as to the horizontal and vertical components of the climb away from a runway. Pilots carry these published routings in books on the flight deck, and brief themselves quickly, as soon as the particular SID is passed to them by "air traffic".

A large busy airport will have very many different SID's, and the choice is dictated by the wind direction (runway direction), the destination of the aircraft, and the need to maintain strict separation between arriving and departing aircraft.They govern the conduct of the flight from take-off to a pre-determined particular point on the climb at which separation of traffic can be guaranteed by other means.
