Doughnuts

While sharing a student house, one recipe above all others was extremely popular: cinnamon doughnuts. It is reproduced here for anyone interested in replicating this culinary masterpiece.

Makes 10
*   225g (8oz) Self-raising flour
*   Pinch salt
*   25ml (5 teaspoons) cinnamon
*   25g (1oz) Butter or margarine
*   25g (1oz) Caster sugar
*   1 large egg, beaten
*   Milk to mix
*   Caster sugar
*   Cinnamon


Sift together the flour, salt and cinnamon. Rub in the butter and stir in the caster sugar. Add the egg and sufficient milk to mix to a soft dough. Form into balls about 5cm (2") and place in a pre-heated deep fat fryer (without basket). Turn a few times and fish out when golden brown (after about 3 minutes).

Drain and toss in caster sugar mixed with cinnamon.

Cook in batches.
