...here's
an excellent dish that can be cooked either on the two quid BBQ
or
using the bean can on the exhaust method.
You’ll be
needing a sharp knife, some cooking foil, and a chopping
board.
Ingredients; 2 chicken fillets, 4 rashers of streaky bacon, red
Leicester cheese, oregano,
salt & black pepper. Shredded lettuce,
tomato, cucumber etc. crusty cobs.
Method – Start by lighting the BBQ.
While you’re waiting for it to warm
up, about 20-25 minutes
use the sharp knife to make a pocket in the
chicken breast.
Cut a nice lump of cheese to fill the pocket & tuck
it in together with a sprinkle of oregano.
Stretch the bacon rashers
along the chopping board until they’re about twice their original
length
using the back of the knife.
Wrap these tightly around the
chicken fillet so that they hold the cheese in place
& hold the
whole thing together.
Now wrap it up in cooking foil.
Dead
easy, cook on the BBQ, turning it a quarter turn every 10 minutes
or so,
it should be done after about 40 minutes.
If you’re going to do
it on the hot manifold,
you have the luxury of being able to prepare
the chicken parcels at home.
Squeeze them tightly into the exhaust
mounted dog-food tins.
You will
need to travel about 150 miles to ensure that it’s thoroughly
cooked,
unless you can keep your van running in excess of 93mph.
In
which case it, & indeed the van will both be done after about 40
miles.
Whichever method you use, please ensure that it’s done properly
by checking that any juices run clear.
It
shouldn’t be a problem though,
because the cheese will boil &
cook the meat from the inside
at the same time as you’re cooking it
from the outside.
If you
have any concerns that it’s not quite right,
Shove it under the
grill – don't be illl.
Serve
with the salad & some crusty bread.
