Spicy Chicken Kebabs
Colour coded Chicken kebabs
 
- if you've been stupid enough to buy a blue van without consulting this site, you have only yourself to blame.
 
Preparation time; 20 minutes, (just the time that the barbecue takes to get to temperature)
Cooking time; 15 - 20 minutes
Clear up; Easy, just wipe the chopping board, everything else in the bin
 
Ingredients;
Chicken fillets,
a couple of peppers,
a couple of tomatoes,
tomato sauce,
marmalade,
butter
tabasco sauce.
Oh, & a tin of cat food - preferably "Felix".
 
Start by lighting the barbecue and assemble the kebabs and make the marinade.
Open the tin and chuck away the Felix - revolting,
now put a nice big blob of butter into the bottom of the tin and put it straight onto the barbecue.
Add a similar sized blob of marmalade and the same again of tomato sauce.
Stir it up a bit & add a few drops of the tabasco sauce.
Watch for it starting to bubble, stir it again and take it off the heat.
 
Start cutting the chicken up into pieces about 1 inch square.
Do the same with the peppers and cut the tomatoes into quarters.
Start threading alternate bits of chicken and salad onto two kebab skewers
Use two, because salad doesn't like being cooked and will keep trying to roll to the bottom and play dead
If you've got it on two skewers, it has no choice, it has to turn when you ask it.
 
By the time you've threaded all that lot the BBQ should be just about ready to use.
Lay the kebabs onto the grill and baste well with the marinade.
They'll take between about 15 & 20 minutes to cook,
Keep turning & keep basting, remember that the marinade has got a lot of sugar in it,

When it looks about done, lay some pitta breads on top of the kebabs,
Just long enough for them to warm through.
Split the pittas, fill with the meat and salad.
 
Serve with lashings of cole slaw.
