Ringwarmer Jerk Chicken

Ingredients

1 large chicken
Half cup allspice berries
1 onion or 6 scallions
3 habanero chillies (or half a cup) chopped.
half inch cinnamon
1 tbs. grated nutmeg
1" ginger
sprig of fresh rosemary
4 bay leaves
3 cloves
1 cup of white wine vinegar

Method

Grind the spices.
Put everything into the blender and whack it.
De-joint the chicken. Bend it along the back bone  and cut the breasts off. Slash the wings, breasts and legs deeply and rub in the jerk mixture. Put it in a shallow bowl and leave it in the fridge to  marinate for a day or two, turning and basting a  couple of times. Cook on the barbecue. Great with barbecued potato wedges!
