Boil the potatoes in their skins. Let them cool and peel. mash well. Chop the onions very finely. Grind the ginger and green chilli. Add them to the potatoes. Also add in the spices for the potato mixture and mix in. Apply some oil to your hand and start rolling the potato mixture to balls about the size of a walnut. To make the batter: Sieve the gram flour and the salt, turmeric and chilli powder. Add enough water to make batter of dropping consistency. Heat the oil in a deep frying pan. Add two dessertspoons of the hot oil to the batter and add a pinch of sodium bicarbonate and mix well. Dip the potato balls in the batter and fry in the hot oil until they are golden and crispy. Drain on kitchen paper. Cook all the potato balls and serve immediately. Luxuriate in the adoration of your devoted guests and accept their compliments.
