Potato Balls

This was taught to me by Mrs. Ganatra (bless her cotton socks). Serve with vegetable baji's. See elsewhere on this site.
These go well with stuff like chutneys, cheese mayonnaise, lots of beer etc.

Ingredients

1 bottle of cooking oil
1lb potatoes
1 med onion
Juice 0.5 lemon
0.5 oz. sultanas
0.5 oz. Chopped cashew nuts
2 cups gram  (chickpea) flour
Spices for potatoes:
1 teaspoon salt
2 teaspoon sugar
1 green chilli
0.5 in. fresh ginger
0.5 teaspoon ground cloves
0.5 teaspoon ground cinnamon
0.5 teaspoon garam masala
Spices in Batter
0.25 in. chopped ginger
1 teaspoon chilli powder
0.5 teaspoon turmeric
Pinch of sodium bicarbonate
Juice of half a lemon

Method

Boil the potatoes in their skins. Let them cool and peel. mash well.
Chop the onions very finely. Grind the ginger and green chilli.
Add them to the potatoes. Also add in the spices for the potato mixture and mix in.
Apply some oil to your hand and start rolling the potato mixture to balls about the size of a walnut.
To make the  batter: Sieve the gram flour and the salt, turmeric and chilli powder. Add enough water to make batter of dropping consistency.
Heat the oil in a deep frying pan. Add two dessertspoons of the hot oil to  the batter and add a pinch of sodium bicarbonate and mix well.
Dip the potato balls in the batter and fry in the hot oil until they are golden and crispy. Drain on kitchen paper.
Cook all the potato  balls and serve immediately. Luxuriate in the adoration of your devoted guests and accept their compliments.
