Champ

Ingredients

4 lb. potatoes.
0.5 lb. scallions.
0.5 pt. milk.
2 tsp. salt.
4 oz. butter.

Method

Peel the potatoes and boil until cooked. Simmer the
scallions in milk for about 5 minutes. Strain potatoes
and mash well. Add the hot milk and scallions, salt,
pepper and half the butter and mix in.
Form the champ into a volcano shape, make a crater
in the centre and stick in the remaining butter. Eat
and grow fat!
