Crubeens  (Pigs Feet)

Ingredients

8 pigs' trotters
2 tsp. salt

Method

Wash trotters thoroughly. Take off the horny shell on the feet.  Cover with water and soak overnight Rinse and cover with fresh cold  water in a large pot Bring to the boil. Remove scum. Lower heat and simmer for 2-3 hours or until tender. Drain and serve hot with freshly prepared mustard and bread and butter.
