Sweet & Sour Meatballs |
Serves 4
for the meatballs
· 450g (1 LB) turkey mince · 1 egg (to bind) · 1 cup breadcrumbs · 1 onion, peeled and chopped
for the sauce
· 75g (3oz) brown sugar · 3 level teaspoons cornflour · 7 tablespoons water · 4 tablespoons vinegar · 1 vegetable stock cube · 1 small can pineapple pieces (plus juice) · 1 tablespoon soy sauce
Mix together all the meatball ingredients. Carefully shape the mixture into small meatballs and press well together. Place the meatballs under a preheated grill and cook gently for 15 minutes, turning them regularly to ensure even cooking. To make the sauce, mix the brown sugar and cornflour together in a saucepan. Blend in the water, vinegar, stock cube, pineapple juice and soy sauce. Cook and stir until thick and bubbly. Stir in the meatballs and pineapple pieces, and simmer very gently for 15 minutes. Serve with rice or noodles (50g (2oz) uncooked weight per person) and stir-fried vegetables. |
