Summer Fruit Salad

Serves 4

 

· 100g (4oz) black seedless grapes

· 100g (4oz) green seedless grapes

· 100g (4oz) strawberries

· 2-3 small tangerines

· ½ honeydew melon

· 1 large crisp eating apple

· 2-3 tablespoons lemon juice

· 300ml (½ pint) orange juice

· Artificial sweetener to taste

 

 

Slice the strawberries.  Peel the tangerines and break into segments.  Remove the seeds from the melon and slice the flesh.  Peel, core and slice the apple.

Mix all the fruit together and stir in the lemon juice, making sure the apple is well coated.  Pour the orange juice over the fruit and mix well.  Sweeten to taste with artificial sweetener.

Place in a bowl, cover with cling film, and chill in the refrigerator for at least an hour before serving.
