Sticky Ginger Chicken |

Serves 4
· 8 chicken drumsticks or thighs · 2 tablespoons lemon juice · 2 tablespoons light Muscovado sugar · 1 teaspoon grated fresh ginger · 2 teaspoons soy sauce · Freshly ground black pepper · Salt to taste
In a mixing bowl, mix together the lemon juice, sugar, ginger, soy sauce and pepper to form a glaze. Taste, and add a little salt if required.
Remove the skin and any fat from the drumsticks or thighs. Slash the flesh on each one 2 or 3 times and toss the chicken in the glaze.
Cook the chicken under a moderately hot grill, turning them occasionally and brushing with the glaze. Cook until the juices run clear when the flesh is pierced with a skewer. |
