Savoury Rice

Serves 2-4

 

· 1 cup Basmati rice.

· 2 cups chicken stock made with 1 stock cube.

· ½ bunch spring onions finely sliced.

· ½ red pepper finely diced.

· 75g (3oz) frozen peas.

· 75g (3oz) frozen sweetcorn.

· 2 teaspoons light Soy sauce.

· 1 rounded teaspoon crushed garlic.

· ¼ teaspoon hot chilli powder.

· ¼ teaspoon ground turmeric.

 

 

 

Dry-fry the onions and red peppers in a saucepan for a few minutes.

Add the peas, sweetcorn, Soy sauce, chilli powder and turmeric, stir together.

Add the rice and chicken stock stir once then cover.  Bring to the boil and simmer on a low heat until all the liquid is absorbed, approximately 12-14 minutes.

 

Serve hot or cold.
