Serves 4
· 2 medium onions, sliced · 225g (8oz) courgettes, sliced · 2 small aubergines, sliced · 1 large pepper, seeded and finely sliced · 1 X 400g (14oz) can tomatoes · 2 garlic cloves, crushed · 2 bay leaves · 2 teaspoons chopped fresh thyme · Salt and black pepper · Fresh basil to garnish
Preheat a non-stick frying pan. Dry-fry the onion in the pan until soft. Add the courgettes, season and cook for a further 2-3 minutes. Pour the onion and courgettes into a large saucepan. Return the frying pan to the stove, add the aubergines and green pepper, season and dry-fry for 4-5 minutes, then transfer to the large pan. Pour the tomatoes into the frying pan. Add the garlic, bay leaves and thyme, bring to the boil then pour over the vegetables. Simmer the vegetables for 10 minutes to combine the flavours. Just before serving, sprinkle with fresh basil. |
