Pan-Fried Tuna with Peppers & Noodles

Serves 4

 

· 4 fresh tuna steaks

· 225g (8oz) [dry weight] thread noodles

· 1 teaspoon vegetable oil

· 1 garlic clove, crushed

· 1 red pepper, seeded and finely sliced

· 1 yellow pepper, seeded and finely sliced

· Zest and juice of 1 lime

· 1 tablespoon light soy sauce

· salt and freshly ground black pepper

· 4 lime slices and red pepper to garnish

 

 

 

Prepare noodles according to packet instructions, and refresh under cold running water.

 

Season tuna steaks well with salt and black pepper.  Heat griddle pan or non-stick frying pan and add the vegetable oil.  Place the tuna, best side down, in the hot pan.  Cook until the tuna changes colour halfway up the steak, turn the steaks over and cook for a few minutes.

Remove from the pan and place in a warm oven to keep hot.

 

Add the garlic and peppers to the pan and sauté quickly until they start to soften.  Add the noodles, lime zest and juice and soy sauce.  Cook for 1-2 minutes, turning regularly.  Place noodles on warmed serving plates and top with the tuna steak.

Garnish each one with a slice of lime and red pepper.
