Oven Chips |

Serves 4 · 2-3 large potatoes · 1 teaspoon oil
Preheat the oven to 220 C, 425 F or Gas mark 7. Peel the potatoes and cut into chips. Blanch in boiling salted water in a saucepan for 5 minutes, then drain. Meanwhile, brush a baking tray with the oil and place in the oven for 7-10 minutes until the oil is very hot. Spread the chips over the baking tray and turn them gently so they are lightly coated with the oil. Bake on the top shelf of the oven for about 35-40 minutes (depending on the size of the chips) until they are soft in the middle and crisp on the outside. Turn the chips once or twice during the cooking time. |
