Nutty Pesto Cutlets

 Serves  4

 

· 4 lamb cutlets

· 2 tablespoons Pesto sauce

· 2 tablespoons fresh chopped parsley

· 25g (1oz) pine nuts

 

 

Spread both sides of each lamb cutlet with the sauce.  Cook under a medium-hot grill for 5 minutes on each side.  Sprinkle each cutlet with parsley and pine nuts and grill for a further 1-2 minutes until just browned.  Serve
