Mocha Meringues |

Serves 4
· 4 meringue nests · 2 tablespoons cornflour · 200ml (7floz) skimmed milk · 25g (1oz) plain chocolate, chopped · 1½ teaspoons sugar · 1 egg white · 2 tangerines, peeled and sliced
Blend the cornflour with the milk in a saucepan, add the chocolate and sugar, and bring to the boil, stirring until thickened. Cover to prevent a skin forming and leave to cool. Whisk the egg white until stiff, whisk the cold filling, and fold the two together. Fill the meringues nests with the tangerines and chocolate mixture shortly before serving. |
