Low Fat Sherry Trifle

Serves 4

 

· 1 packet sugar-free jelly

· 2 sherry glasses sweet sherry

· 2 medium bananas, peeled and sliced

· 1  425g (15oz) carton low fat custard

· 2  150g (5oz) virtually fat-free vanilla flavoured yoghurts

· strawberry slices and lime zest to decorate (optional)

 

 

Make up the jelly in a large dish according to the packet instructions, but substitute 2 glasses of sweet sherry for 120ml (4 fl oz) water.  Divide the jelly between 4 individual dishes, add the bananas and leave to set.

When set, cover each with the low-fat custard and smooth the yoghurt over the top. Decorate with strawberry slices and a little lime zest.
