Kiwi Fruit Sorbet |

Serves 4
· 5 kiwi fruit, peeled and thickly sliced · 2 tablespoons Cointreau · 100g (4oz) caster sugar · 1 egg white · fresh fruit to decorate
Place the kiwi fruit and the Cointreau in a blender and blend until smooth. Pour the mixture into a bowl and freeze for about 2 hours. Tip the mixture into a fresh bowl and whisk to break up the crystals. Beat the egg white until stiff and fold into the puree. Place in a bowl and freeze. Remove from the freezer 20 minutes before serving and place in the refrigerator. Decorate with fresh fruit. |
