Crunchy Topped Fruit Fool |

Serves 4
· 25g (1oz) jumbo oats · 2 teaspoons granulated sugar · 225g (8oz) strawberries · 300g (11oz) low-fat fromage frais · Artificial sweetener to taste (optional)
Place a sheet of foil on the grill pan and spread the oats out on the foil. Sprinkle with the sugar. Lightly toast under the grill and allow to cool. Reserve one strawberry for decorating. Mash the remainder with a fork and stir into the fromage frais. Sweeten to taste with the sweetener if desired. Spoon into serving glasses and chill. Just before serving, sprinkle the fruit fool with the toasted oat flakes and decorate each glass with a slice of the reserved strawberry.
