Crispy Crumbed Pork Ecalopes |

Serves 4
· 4 lean pork escalopes · 1 large egg, beaten · 50g (2oz) fresh white breadcrumbs · 50g (2oz) mature half fat cheese, grated · 1 teaspoon dried mustard powder · salt and freshly ground black pepper
Preheat oven to 190°C, 375°F or gas mark 5. Combine the breadcrumbs, cheese, mustard and seasoning in a shallow dish and then set aside. Flatten the pork escalopes with a rolling pin or a meat mallet . Dip the pork in the beaten egg and shake off any excess. Press into the breadcrumb mixture and coat well. Arrange the pork on a greased baking tray, bake for 15-20 minutes until golden. Garnish with fresh thyme, serve with vegetables. |
