Cod Steak with Herby Stuffing Crust |

Serves 4
· 4 cod steaks · 1 packet lemon and thyme stuffing · 4 spring onions, very finely chopped · 2 garlic cloves, very finely chopped · 100g (4oz) finely chopped fresh parsley · 2 beef tomatoes, thickly sliced
Preheat the oven to 200°C, 400°F, Gas Mark 6.
Season the fish and place on a non-stick baking sheet.
Make up the stuffing as directed on the packet. Add the spring onion, garlic and chopped parsley and mix well together.
Place a generous spoonful of the mixture onto the fish, spreading it evenly over the top of the fish. Arrange the tomato slices across the top.
Bake in the oven for approximately 10—15 minutes until the fish is cooked through and golden brown on top.
Serve with a low-fat parsley sauce. |
