| Save fried ingredients, whisk eggs lightly and fry gently.
When set underneath, place cheese and tomatoes onto omelette. Grill until cheese has melted and omelette is cooked. | ![]() |

| Gently fold in half and enjoy with bacon, bread, oatcakes or whatever. | ![]() |
METHOD
Finely chop onion and pepper and fry, gently in butter until soft.
Peel bananas, cut into chunks and add to onions/pepper.
Add spices and stir.
When bananas have softened and warmed through, serve in small bowls, topped with a spoonful of Greek yoghurt.
OPTION: Stir in a teaspoon of Ouzo to the yoghurt for extra "Greekness"
