CHILLI MORNING

or CHILLI OMELETTE


INGREDIENTS

2 eggs
½ onion
2 mild chillies such as Hot Banana, deseeded and chopped
approx 4 mushrooms, quartered
Stilton cheese
Slices of tomato
Extra virgin olive oil
Fry the onion and chilli in a little oil until soft.
Fry the mushrooms in similar way
Save fried ingredients, whisk eggs lightly and fry gently.
When set underneath, place cheese and tomatoes onto omelette.
Grill until cheese has melted and omelette is cooked.
Add mushrooms, onions and chillies.
Gently fold in half and enjoy with bacon, bread,
oatcakes or whatever.

BANANA CURRY

INGREDIENTS


3 very ripe bananas
½ yellow or orange sweet pepper (capsicum)
½ onion
1 oz butter
half teaspoon turmeric (haldi)
half teaspoon chilli powder (adjust to suit)
tub of cold Greek yoghurt

METHOD

Finely chop onion and pepper and fry, gently in butter until soft.
Peel bananas, cut into chunks and add to onions/pepper.
Add spices and stir.
When bananas have softened and warmed through, serve in small bowls, topped with a spoonful of Greek yoghurt.
OPTION: Stir in a teaspoon of Ouzo to the yoghurt for extra "Greekness"
