Now we have them harvested and preserved and even some fresh chillies, so what do we do with them? Curry and chilli con carne are the British favourites and there are a million recipes for each on the internet.

Some of the dried chillies can be ground into a powder or crushed into flakes. Both can be used as condiments or wherever powder is called for.

"Big Jim" is mild enough to be chopped and fried for use as a garnish or slit, deseeded, stuffed and baked to provide a hearty side dish.

The other milder ones can be deseeded and chopped for use as garnishes on omelettes or rice to improve presentation.

Try pricking a Habenero and push it into a bottle of olive oil. Leave for two weeks, then have a taste. WOW! Salad dressings, fried eggs, garlic bread and many other things will have a different feel to them alright! Also try chilli vinegar on your chips.
