WHITE FISH ROSTI |

Ingredients: 4 Frozen Potato Rősti Cakes 4 tsps Olive Oil 4 tblsps Tomato-based Pasta Sauce or Salsa 340g skinned & boned White Fish 45g Mozzarella Cheese, grated or chopped 45g Grated Mature Cheddar Cheese 4 Anchovies (optional) A few, stoned & sliced Olives (optional) Fresh coriander (optional) Garnish options: Dill leaves (optional) Thinly sliced Red Onion (optional) Mint leaves (optional)

Method Place rosti on an oiled baking sheet. Spread 1 teaspoon Oil and 1 tablespoon sauce or salsa over each cake. If using coriander, tear it into pieces and place on top of the salsa. Roughly chop the fish into chunks and distribute evenly between the cakes. Top with a mixture of mozzarella and cheddar cheeses. Grate black peper over and sprinkle with either anchovies or olives (or both). Bake in a hot oven for 20/25 minutes, remove from oven and garnish as preferred.
