Yes, it involves Porter again, I'm forcing a second fermentation.

I've bottled about three of the five gallons so far and this thought pasted though my head, (it was a short journey) - Can you ferment a beer twice?

Well lets find out then.

   

So how does one start a second fermentation he says in his pushiest voice, you need yeast and sugar.

I mixed up about 20 grams of raw cane sugar with molasses in to about a pint of water and simmered it for 5 minutes to make a syrup.

Took a small sample of the syrup and added yeast to start it off and 'hey Presto' it worked. now adding the sugared water to my 2 gallons and poured in the yeast.

   

   


Wednesday 31st January 2008

12 hours later (OK - The next morning) my Bucket of Beer was a sea of foam bubbling away like a traditional witches caldron.

Yes, it really is a bucket.
