May contain nuts . . . and other things


 
What do the mean . . MAY contain nuts, don't they know?

OK, not metal nuts but fruit nuts such as peanuts, hazelnuts etc, things that may be problematic to those with certain allergies.

The chocolate companies are to the most extent are playing safe, whilst nuts may not be an ingredient of the product it may be produced in an environment that handles nuts and cross contamination, although unlikely can't be ruled out.

Better safe than sorry is the by-word here.

"Lecithin is used commercially in substances requiring a natural emulsifier and/or lubricant, from pharmaceuticals to protective coverings. For example, lecithin is the emulsifier that keeps cocoa and cocoa butter in a candy bar from separating."

BUTTERFAT


Butterfat (also known as Milkfat) is the term used to describe the fat content that occurs in milk naturally.

"It's what gives dairy products their body, structure, mouth feel and richness of texture. It's a difficult fat to "fake" because it's actually made up of a bunch of different fats, or "tryglycerides", to be more precise, that have their own melting ranges ranging from -40 C to plus 40C."
