Maltese Rabbit Stew

Rabbit (cut into pieces)
2 onions
2 tomatoes
4 laurels
2 potatoes
1 cup of red wine


METHOD:-

Fry the rabbit lightly in a small amount of lard or oil. In a saucepan, fry the chopped onions adding tomatoes and laurels. Together with the rabbit add two cups of water and then leave it to simmer for 15 minutes, after which pour in the wine and chopped potatoes leaving the rabbit to be cooked for one hour on a slow fire.
