Shown in the 1861 census as married to John. Age 23 she would have been born around 1838 in Langley, Kent.
The 1871 census gives essentially the same information.
The 1841 census shows William with his wife Sarah but the birth certificate for his daughter Eliza age 3 in 1841 gives her mother as Elizabeth.
Assuming that I have the correct family, Elizabeth must have died between 1838 when Eliza was born and 1841. William must have re-married prior to the 1841 census. This is all quite speculative.
