Liver Cake

Ingredients

1lb / 450g Liver
1lb / 450g Wholemeal flour
3 tablespoons oil
2 large eggs
3 large cloves of Garlic


Method

Place the liver, eggs, oil and garlic in a liquidizer or food processor.

Mix well and then add to the flour.

Stir until all is thoroughly amalgamated.

Put into a shallow dish and microwave for 5 - 10 minutes or cook in the oven at about 180
degrees C (gas mark 4) for about 45 - 60 minutes.

You could also cook them in individual cup cakes using paper cases, if preferred.

Leave to cool and cut into pieces and place in small bags.

Can be frozen if required.


Tuna Treats

Ingredients

3 tins tuna (drained)
1 tin pilchards in tomato sauce
3 large eggs
6 oz / 170g wholemeal flour
garlic...either fresh or puree


Method

Mix all the ingredients together thoroughly using a liquidizer or food processor.

Place in lined (easier to get it out of the tin) swiss roll type tins.

Cook in the oven at about 180 degrees C (gas mark 4) for for 20 mins.

Leave to cool and cut into pieces and place in small bags.

Can be frozen if required.


Garlic Biscuits

Ingredients

8oz / 260g Whole wheat flour
4oz / 115g Stone-ground cornmeal
3.5 oz / 100g Sesame seeds
3 eggs
2fl oz / 60ml Milk
4fl oz / 125ml Chicken stock
2 tablespoons Olive oil
2 Cloves garlic, finely chopped


Method

Preheat oven to 180 degrees C (gas mark 4)

Mix the flour, cornmeal and sesame seeds in a large bowl.

Beat 2 of the eggs with the milk then add the chicken stock, olive oil and garlic.

Stir this mixture into the dry ingredients and mix well until it forms a firm dough.

Leave to stand for 15 minutes.

Place the dough on a lightly floured surface.

Roll out to a thickness of quarter inch or 6mm and cut into shapes.

Beat the remaining eggs and brush over the biscuits

Place on a lightly greased baking tray and bake for 25 to 35 minutes or until golden brown.

Remove from tray and cool before serving.
