New Zealand Suprise Cake

It may seem strange to include a cake recipe on a family tree site, but it is a reasonable goal to include any noteable achievements of the people mentioned.

New Zealand Suprise Cake is a noteable achievement, being about the nicest form of fruit cake ever invented. My mother, Mrs P Newell (nee Smith), created this (probably by accident), and has generously agreed to share the recipe with the world (see copyright notice below).

Ingredients:

  • 1/2 pound of dried fruit (Currents, sultanas, raisens)
  • 1/4 pound of Marzipan
  • About 8 glace cherries
  • 6oz Demerera sugar
  • 6oz Self Raising flour
  • 4oz Margerine
  • 2 large eggs
  • 1 tsp vanilla essence
  • 1 tsp almond essence
  • Pinch of salt.
  • Instructions:

  • Cover the dried fruit with water in a pan and boil for 5 minutes. Strain off the water. Chop the margerine and add it to the fruit. Add the cherries to the mixture.
  • Beat the eggs and add the vanilla and almond essence. Add this to the fruit mixture.
  • Add the sugar and salt and stir. Progressively mix in the flour. The mixture should not be allowed to become dry.
  • Put half the mixture into an 8 inch round tin. Roll and shape the marzipan to form a layer across the top of the mixture in the tin, then add the rest of the mixture on top of the marzipan.
  • Cook for 90 minutes on gas mark 3, 325f or 170c.
