New Zealand Suprise Cake
It may seem strange to include a cake recipe on a family tree site, but it is
a reasonable goal to include any noteable achievements of the people mentioned.
New Zealand Suprise Cake is a noteable achievement, being about the nicest form
of fruit cake ever invented. My mother, Mrs P Newell (nee Smith), created this
(probably by accident), and has generously agreed to share the recipe with the
world (see copyright notice below).
Ingredients:
1/2 pound of dried fruit (Currents, sultanas, raisens)
1/4 pound of Marzipan
About 8 glace cherries
6oz Demerera sugar
6oz Self Raising flour
4oz Margerine
2 large eggs
1 tsp vanilla essence
1 tsp almond essence
Pinch of salt.
Instructions:
Cover the dried fruit with water in a pan and boil for 5 minutes.
Strain off the water. Chop the margerine and add it to the fruit.
Add the cherries to the mixture.
Beat the eggs and add the vanilla and almond essence.
Add this to the fruit mixture.
Add the sugar and salt and stir.
Progressively mix in the flour. The mixture should not be allowed
to become dry.
Put half the mixture into an 8 inch round tin.
Roll and shape the marzipan to form a layer across the top of the mixture in the tin,
then add the rest of the mixture on top of the marzipan.
Cook for 90 minutes on gas mark 3, 325f or 170c.
